Happy Easter! Have you ever made gluten-free galettes or crepes? They are super easy, and the options for toppings are endless.
This morning we had two kinds:
👉 Nutella, banana, & strawberry topped with 100 mile roasted coffee grounds from Stumptown coffee.
👉 Prosciutto and Manchego cheese
Buckwheat galettes are my favorite and they are naturally gluten-free. But I couldn’t find buckwheat flour on the empty shelves in the store this week, so I used a blend of white rice flour and brown rice flour instead.
2 cups whole milk (or milk substitute)
1 teaspoon salt
1 tablespoon sugar
3 tablespoons butter, melted
1 1/4 cup buckwheat flour*
*Alternatives: 3/4 cup white rice flour, and 1/2 cup brown rice flour
3/4 cup buckwheat flour, 1/2 cup white rice flour
Mix well and refrigerate overnight. Enjoy!
